LOS FELIZ–Just in time for holiday entertaining, a new cocktail bar has opened on Vermont Avenue in a former rehearsal space for the Skylight Theater.
Called Pinky’s, the bar takes its distinctively ’80s design cues from the coasts of Amalfi and Miami, with few winks to owner Beau Laughlin’s time as a competitive swimmer.
But while the bar may hearken to sunnier seasons, its drinks are packed to the brim with holiday cheer.
It Is What It Is pairs “butter-washed” scotch–a process that involves mixing the spirit with browned butter, then freezing it so that the flavor remains, but the solids are separated back out–with apple and cinnamon notes for a drink that feels as homey and warm as a fresh slice of pie.

A stylish new bar and restaurant, equal parts Paris and Palm Springs, with a healthy dose of high-end ‘80s design (emphasis on high-end—you’ll find no neon walls or wacky patterns here) has quietly opened on the border of Silver Lake and Los Feliz, in the former black-and-white-chevron-striped home of Mexican restaurant Malo.
The eatery, whose straightforward moniker is simply “Bar Restaurant,” pairs exceptionally executed classic cocktails and a thoughtful wine menu with fresh takes on standard European bistro fare from French-trained chef Douglas Rankin (formerly of West Hollywood’s Michelin-starred Trois Mec).
Rankin, a Los Feliz resident, joins former Malo owner Jeff Ellermeyer—who is also the brains behind Echo Park beer and wine bar El Prado—General Manager Pierluc Dallaire, who helped open Silver Lake’s Botanica restaurant and market and Gregory Baumgartner, the opening pastry chef at Los Feliz’s Atrium, for an all-star cast of locals at the helm.

Atrium, the first of several new restaurants planned for Los Feliz in the coming months, opened October 25th on a bustling stretch of Vermont Avenue next to Skylight Books.
The restaurant, which features a large plush-yet-modern dining room, a full bar and ample outdoor seating, is run by several local veterans, including restaurateurs Beau Laughlin and Jay Milliken, best known for Silver Lake’s Kettle Black and Sawyer; Hunter Pritchett, the former chef at Virgil Village’s Melody; Kettle Black alum Jordan Young, who will run the beverage program; and former Little Dom’s manager Cameron Dodge White. Pastry chef Gregory Baumgartner, of Downtown’s 71 Above and West Hollywood’s E.P. & L.P. is also a partner.
Appeared in the November 2018 print edition of the Los Feliz Ledger. Read the full article online at losfelizledger.com
